Old-Fashioned Meat Loaf

fresh bread crumbs, about 2 slices of bread

dried parsley (qty 1-2 tsp)

slices bacon, halved

Preheat oven to 350°.

Melt butter in medium skillet over medium heat. Add onions and cook until tender, 5 minutes. Add garlic and thyme. Cook 30 seconds more. Transfer to large bowl. Cool.

MAKE FRESH BREADCRUMBS: Tear up 2 slices of bread into small pieces. Then pulse in a blender, spice mill, or food processor until crumbs are achieved. This should only take a few seconds.

In a small bowl, pour milk over the breadcrumbs and stir to make a paste. Then add egg, 1/3 cup ketchup, parsley, Worcestershire sauce, salt & pepper. Mix with fork until well-blended. Then add this mixture to the onion and garlic mixture in the large bowl. Mix well.

ADD the meats, and mix with hands until thoroughly blended.

CUT 2 bacon slices lengthwise and then crosswise, to make 8 pieces.

Pat into 9 x 5" loaf pan. Spread top with remaining 2 Tbsp ketchup and arrange raw bacon on top.

Bake 50 minutes - 1 hour. Remove from oven and let stand 10 minutes. Carefully remove the bacon strips and discard. Cut meatloaf into 8 slices. Drain drippings and drizzle a small amount of drippings on top of each serving as desired. Discard the rest of the drippings.
