Oatmeal Cocoa Chippers

unsweetened cocoa powder

(2 sticks) butter, softened

firmly packed brown sugar

granulated sugar

vanilla extract

Semi-Sweet Choc. Morsels

(12 oz = 2 cups)

Quaker Oats (quick or old-fashioned), uncooked

walnuts, chopped

Preheat oven to 350°, or 325° convection cook.

In small bowl, combine flour, Cocoa powder, baking soda and salt. Set aside.

In large mixer bowl, combine butter, brown sugar, granulated sugar and vanilla extract. Beat until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in 1 package (12 oz) Semi-Sweet Chocolate Morsels, and Quaker Oats and walnuts.

Drop by slightly rounded measuring tablespoonfuls onto ungreased cookie sheet.

Bake 9 to 11 minutes for chewy cookies, or if convection cook for 8 minutes. Let stand 2 minutes before removing from cookie sheet. Cool completely. Makes 3.5 - 4 dozen cookies.

For the flour, alternatively use 1/2 cup whole wheat pastry flour, and 3/4 cup unbleached white flour.
