Maple Date-Nut Bread

dates, chopped

maple syrup

pecans, chopped

brown rice flour

whole wheat pastry flour

Pour boiling water over dates and butter. Stir until butter melts. Add beaten egg, maple syrup and chopped nuts. Sift together the flour, baking powder, salt and soda. Combine with the whole wheat pastry flour. Pour the liquid mixture into the dry ingredients. Stir until just dampened. Pour into a greased loaf pan and baked in a moderate oven 350° for 1 hour. Let cool before slicing. Makes 1 loaf.
